These are the three main components, and if you have them, then consider that in an hour or an hour and a half you will be able to put the kettle on and invite your family for tea with surprisingly tender inside and slightly crispy on top pastries, which will certainly not leave anyone indifferent.

Different recipes may contain different amounts of ingredients, which determines the size of the finished pie. Different baking times may also be given, and this is understandable; the smaller the pie, the faster it bakes.

But if you want to bake it smaller, then I will indicate a smaller proportion in parentheses. But for our family, a small proportion is not suitable, since such baked goods are eaten in one evening.

We will need:

  • flour - 3 cups (2 cups)
  • sugar - 1 cup (0.5 cups)
  • butter 82.5% - 200 g (100 g)
  • soda - 0.5 teaspoon

For filling:

  • cottage cheese - 500 gr
  • egg - 4 pcs (3 pcs)
  • sugar - 1 cup (0.5 cups)
  • vanillin - on the tip of a knife

If the same value is specified, then it is the same for both large and small pies.

Preparation:

1. For cooking, you can use either low-fat or full-fat cottage cheese. From fatty cottage cheese the filling will be more tender and airy. Low-fat cottage cheese will make it a little dry.

The pie itself turns out to be completely non-dietary, since it will contain a fairly large amount of oil. Therefore, everyone can decide for themselves about the fat content of cottage cheese. I usually don’t use very fatty cottage cheese. I take about 5 - 9%.

Cottage cheese comes in different grain sizes, but despite this, any of them must first be crushed. There are two ways to do this. The first is to punch it with a blender, and the second, more labor-intensive, is to grind it through a sieve.


I use the second method, “alas”, the day before my grandson visited me and played with my blender, now it doesn’t work for me. And since I haven’t purchased a new one yet, I have to grind it. This process turned out to be the most labor-intensive and time-consuming for me. Usually I grind cottage cheese with a blender.


2. The cottage cheese turned out like fine white fluffy snow. Beat eggs into it and add sugar.


The amount of sugar can also be varied. One glass of sugar will make a fairly sweet filling. Therefore, if you don’t really like sweets, you can reduce it a little.

3. Now you will need a blender or mixer again in order to mix the mass until creamy.

But today I have a difficult journey, and I whisk all the ingredients until the mass becomes homogeneous.

4. But finally, everything worked out, and you need to remember to add vanillin at the tip of the knife. In order for it to disperse better in the curd mass, it can be diluted in a small amount of water. Mix again with a mixer or whisk and leave aside for now.

5. Now let's start preparing the dough. It will turn out unusual and will look like crumbs.

We will need butter. I keep saying in each of the articles that for cooking any food using butter, it is better to take it with a fat content of 82.5%.

If the percentage of oil is lower, then it is no longer oil, but trans fat. It does not bring any benefit to us, but it can cause harm to our health. All store-bought baked goods are prepared in this kind of butter or margarine. Frequent use of such products does not bode well.

There is no need to take the butter out of the refrigerator in advance. While you are making the filling, let it lie in the cold. When the time comes, take it out and cut it into very small cubes. While it is cold, cutting it will not be difficult. Although 82.5% oil is never hard, it is quite soft even from the refrigerator.

You can also grate it. But in this case, be prepared to scrape it off the walls of the grater.


6. Sift the flour through a sieve, preferably even twice. During this process, it will be saturated with oxygen and the dough will turn out tasty and a little crispy.

Sift it a second time into a bowl of oil.


7. Rub the flour and butter into crumbs with your hands. Try to do this while the oil is still cold. In this case, this can be done quite quickly.


8. Add sugar and rub everything again with your hands.

9. And at the very end, add soda, then mix again so that it is evenly distributed throughout the entire mass.

10. For this pie, it is best to use a springform pan. It will be difficult, almost impossible, to get it out of the usual form. The dough is very crumbly, the filling is heavy. If we start to take it out, it may break right in our hands.

Grease the mold with oil. In order to avoid damaging the surface of the mold with a knife when cutting the cake further, the bottom can be lined with a layer of parchment paper, which is also greased with butter.

11. Pour half of the crumbly dough into the pan. Smooth it over the entire surface and use a tablespoon to form small sides 3 cm high. When we pour out the filling, the sides will keep it from sticking to the walls of the mold.


12. Lay out the filling, almost even pour it out, it turned out to be quite liquid.


13. Then spread an even layer of the remaining dough. Flatten with a tablespoon.


14. Heat the oven to 200 degrees and bake for 15 minutes, then reduce the temperature to 180 degrees and bake for another 15 - 20 minutes.


The top surface of the finished cheesecake should be slightly golden. But it shouldn't burn. There are recipes where the pie is baked for 40 minutes at 180 degrees. This is also acceptable.

Everyone's oven bakes differently, so when you bake, take this into account. If your oven has such a feature that the top burns, but the inside remains damp, even at 180 degrees, then pour water into a fireproof container and place it on the lowest shelf of the oven. Place a baking sheet with a mold above. This will prevent the baked goods from burning.

In any case, you should always be guided not only by time, but also by the type of finished product.

15. Take out the finished baked goods and let them stand for a while to cool. Then disconnect the wall and remove it.


16. Cut into portions and serve with tea, either hot or cold.
