Ingredients for cooking

The most common ingredients for royal cheesecake are needed. Will need

For filling:

  • 500 g cottage cheese;
  • 1 cup of sugar;
  • 4 eggs;
  • vanillin or vanilla sugar;
  • 1 tsp. baking powder;
  • zest from half a lemon;

for test:

  • 2.5 tbsp. flour
  • 1 half glass of sugar;
  • 1 tsp. baking powder;
  • 0.5 tsp. salt;
  • 150 g butter.

How to make royal cheesecake

Let's make the filling first. Combine all ingredients in a deep and convenient container. It is advisable to take homemade, fatty cottage cheese. The lemon zest needs to be grated on a fine grater.

Beat it all with a mixer or in a blender until the mass becomes homogeneous. The consistency is quite liquid - like pancake batter.

In another bowl prepare the dough. In general, it’s difficult to call it a dough - it turns out to be crumbs. Mix dry ingredients. You can sift the flour. If there is no baking powder, then regular soda (0.5 tsp) will do.

Now we take the butter out of the refrigerator and grate it on a coarse grater directly into a bowl with flour and sugar. Periodically dip a piece in a mixture of dry ingredients - this will prevent the grated butter from sticking together into one lump.

Using your hands, quickly grind everything into crumbs.

Line the pan with parchment or baking paper and grease with a little butter. We put a large half of the sand crumbs into the mold, level it and make small sides around the perimeter.

Pour out the curd filling and carefully sprinkle the remaining dough on top.

We send this beauty to bake in an oven preheated to 200 degrees. The cheesecake will remain there for exactly 45 minutes.

Well, now we move on to the most difficult part. We take out this delicate, aromatic miracle and leave it in the cold for 6 hours. In a freshly baked cheesecake, the filling will be runny - don’t be afraid, it will thicken after it cools.

It is better to serve Royal cheesecake with a cup of green tea, but I like to brew aromatic tea with mint and lemon. You can even prepare it for the holiday table. I hope the pie will become one of your favorite cottage cheese baking recipes.

Feel free to pour this lingonberry sauce over the royal cheesecake when you serve it. The dessert will turn out just to lick your fingers, proven by personal experience!

My video recipe

Young housewives so often want to surprise their guests with some delicacy that they sometimes spend half a day searching for rare products, and then half the night preparing them.
It’s such a shame when your masterpiece doesn’t turn out the way you imagined it. To prevent this from happening to you, write down the recipe for royal cheesecake - a dessert that will make not only your children, but also all the guests, lick their fingers. To ensure that the pie turns out great, the recipe is equipped with step-by-step photos that will help you in the cooking process.

Recipe for royal cheesecake with cottage cheese

In order for our royal cheesecake to turn out fluffy and melting in your mouth, we will need:

  • 5 fresh chicken eggs, medium in size
  • 500 g of crumbly high-fat cottage cheese (the fattier the cottage cheese, the juicier the dessert)
  • 200 g butter
  • 1 cup of sugar
  • 2 cups of flour
  • 1 teaspoon baking powder
  • Additives to taste: vanilla, raisins, dried apricots or nuts.

How to cook royal cheesecake

The royal cheesecake loves gentle hands.

You know, there are some dishes that men do best: meat, for example, or salads. Probably because it is not difficult for strong male hands to cut the necessary ingredients correctly and evenly. The taste of the future dish really depends greatly on this.

But gentle, soft and kind women’s hands are great at making dough, and it’s important to knead it by hand. It’s just that the dough is originally ours, women’s.
Let's get back to the recipe.

Right now, turn on the oven and adjust the temperature to 180 degrees.

The process of preparing royal cheesecake is described step by step and consists of three parts.

Filling and its secret ingredient

Place the cottage cheese in a large cup and knead it thoroughly with your hands. Then break all the eggs into the cottage cheese and add soda and half the sugar.

Beat the mixture well with a mixer, and then add whatever you like: a pinch of vanilla sugar or cinnamon, pieces of dried fruit or chopped nuts. This time I finely chopped the dried apricots:

and mixed it into the curd-egg mixture

But the secret ingredient is not the additives, but the mood in which you are now preparing the pie. Kindness, love and cordiality - these are the feelings your royal cheesecake should absorb, although this is not visible in the photo.

Unusual dough

What many people love to make this dessert for is the dough. More precisely, for his absence.

In a separate bowl, grate the butter on a coarse grater.

If it is very soft, you don't have to rub it. Add the remaining sugar and all the flour. Now we immerse our hands in this mixture and begin to vigorously rub it between our palms.

The crumb should be fine and soft so that it is pleasant to plunge your hands into it. Ready?

Forming the cake

Grease the mold for our cheesecake with oil (I previously covered the mold with baking paper) and carefully pour half of the crumbs into it.

Note: - an interesting version of royal cheesecake (the recipe can be found at the link).

Having leveled the layer with a spatula, pour the filling with cottage cheese onto it.

We fill all this splendor with the remaining crumbs, run a spatula over the surface again to make it beautiful, and send the pie to the oven.

The royal cheesecake is baked in the oven for about 45-50 minutes. Do you feel the aroma? You can check the readiness of the dessert the old-fashioned way: by poking a toothpick into the middle.

Entertaining variations

Sometimes the same recipe is used to prepare royal cheesecake with apples. To do this, place a thinly sliced apple on top of the curd filling and sprinkle it with a mixture of cinnamon and sugar. Then they also cover everything with the remaining crumbs and bake.

Another interesting option: chocolate royal cheesecake

An excellent recipe for children who don’t like cottage cheese, but love chocolate muffins. The recipe is the same, but add three to four tablespoons of cocoa to the crumbs. Then the dessert turns out very beautiful in cut.

In real life, the royal cheesecake looks even better than in the photo, and try it yourself how it tastes. Using this recipe, even a housewife who is not experienced in cooking can prepare a pie. Believe me, this dish will become your specialty, and every guest will definitely want to find out your recipe for a wonderful dessert.

In contact with

Of all the cheesecakes, the royal one is considered the most unusual and delicious, which may be why it has such a sonorous name. Typically, these baked goods look like a medium-sized round bun with an open filling in the middle. This one looks more like a closed pie.

But since it contains cottage cheese, and most often has a round shape, that’s why it has the same name as the one traditional for this kind of baking. And apparently due to the fact that the shape is much larger than a regular product, that’s why it received such a “royal name.”

Essentially, this is, of course, a cottage cheese pie. It is prepared from grated dough with curd filling in the middle. We have already prepared one of the pies using a similar technology, this is “plum crumble”.

The word crumble itself is English and means “to crumble.” So in England they have “crumble”, but here we have such a warm and pleasant name.

It is prepared easily and simply. Even someone who has never baked anything in their life can bake it. In order to prepare it you only need ingredients, a little time and desire. These are the three main components, and if you have them, then consider that in an hour or an hour and a half you will be able to put the kettle on and invite your family for tea with surprisingly tender inside and slightly crispy on top pastries, which will certainly not leave anyone indifferent.

And so let's get started.

Royal cheesecake according to the classic recipe

Different recipes may contain different amounts of ingredients, which determines the size of the finished pie. Different baking times may also be given, and this is understandable; the smaller the pie, the faster it bakes.

But if you want to bake it smaller, then I will indicate a smaller proportion in parentheses. But for our family, a small proportion is not suitable, since such baked goods are eaten in one evening.

We will need:

  • flour - 3 cups (2 cups)
  • sugar - 1 cup (0.5 cups)
  • butter 82.5% - 200 g (100 g)
  • soda - 0.5 teaspoon

For filling:

  • cottage cheese - 500 gr
  • egg - 4 pcs (3 pcs)
  • sugar - 1 cup (0.5 cups)
  • vanillin - on the tip of a knife

If the same value is specified, then it is the same for both large and small pies.

Preparation:

1. For cooking, you can use either low-fat or full-fat cottage cheese. From fatty cottage cheese the filling will be more tender and airy. Low-fat cottage cheese will make it a little dry.

The pie itself turns out to be completely non-dietary, since it will contain a fairly large amount of oil. Therefore, everyone can decide for themselves about the fat content of cottage cheese. I usually don’t use very fatty cottage cheese. I take about 5 - 9%.

Cottage cheese comes in different grain sizes, but despite this, any of them must first be crushed. There are two ways to do this. The first is to punch it with a blender, and the second, more labor-intensive, is to grind it through a sieve.

I use the second method, “alas”, the day before my grandson visited me and played with my blender, now it doesn’t work for me. And since I haven’t purchased a new one yet, I have to grind it. This process turned out to be the most labor-intensive and time-consuming for me. Usually I grind cottage cheese with a blender.

2. The cottage cheese turned out like fine white fluffy snow. Beat eggs into it and add sugar.

The amount of sugar can also be varied. One glass of sugar will make a fairly sweet filling. Therefore, if you don’t really like sweets, you can reduce it a little.

3. Now you will need a blender or mixer again in order to mix the mass until creamy.

But today I have a difficult journey, and I whisk all the ingredients until the mass becomes homogeneous.

4. But finally, everything worked out, and you need to remember to add vanillin at the tip of the knife. In order for it to disperse better in the curd mass, it can be diluted in a small amount of water. Mix again with a mixer or whisk and leave aside for now.

5. Now let's start preparing the dough. It will turn out unusual and will look like crumbs.

We will need butter. I keep saying in each of the articles that for cooking any food using butter, it is better to take it with a fat content of 82.5%.

If the percentage of oil is lower, then it is no longer oil, but trans fat. It does not bring any benefit to us, but it can cause harm to our health. All store-bought baked goods are prepared in this kind of butter or margarine. Frequent use of such products does not bode well.

There is no need to take the butter out of the refrigerator in advance. While you are making the filling, let it lie in the cold. When the time comes, take it out and cut it into very small cubes. While it is cold, cutting it will not be difficult. Although 82.5% oil is never hard, it is quite soft even from the refrigerator.

You can also grate it. But in this case, be prepared to scrape it off the walls of the grater.

6. Sift the flour through a sieve, preferably even twice. During this process, it will be saturated with oxygen and the dough will turn out tasty and a little crispy.

Sift it a second time into a bowl of oil.

7. Rub the flour and butter into crumbs with your hands. Try to do this while the oil is still cold. In this case, this can be done quite quickly.

8. Add sugar and rub everything again with your hands.

9. And at the very end, add soda, then mix again so that it is evenly distributed throughout the entire mass.

10. For this pie, it is best to use a springform pan. It will be difficult, almost impossible, to get it out of the usual form. The dough is very crumbly, the filling is heavy. If we start to take it out, it may break right in our hands.

Grease the mold with oil. In order to avoid damaging the surface of the mold with a knife when cutting the cake further, the bottom can be lined with a layer of parchment paper, which is also greased with butter.

11. Pour half of the crumbly dough into the pan. Smooth it over the entire surface and use a tablespoon to form small sides 3 cm high. When we pour out the filling, the sides will keep it from sticking to the walls of the mold.

12. Lay out the filling, almost even pour it out, it turned out to be quite liquid.

13. Then spread an even layer of the remaining dough. Flatten with a tablespoon.

14. Heat the oven to 200 degrees and bake for 15 minutes, then reduce the temperature to 180 degrees and bake for another 15 - 20 minutes.

The top surface of the finished cheesecake should be slightly golden. But it shouldn't burn. There are recipes where the pie is baked for 40 minutes at 180 degrees. This is also acceptable.

Everyone's oven bakes differently, so when you bake, take this into account. If your oven has such a feature that the top burns, but the inside remains damp, even at 180 degrees, then pour water into a fireproof container and place it on the lowest shelf of the oven. Place a baking sheet with a mold above. This will prevent the baked goods from burning.

In any case, you should always be guided not only by time, but also by the type of finished product.

15. Take out the finished baked goods and let them stand for a while to cool. Then disconnect the wall and remove it.

16. Cut into portions and serve with tea, either hot or cold.

The taste of the cheesecake is very delicate, the dough is slightly crispy and airy. The filling has a delicate creamy texture. All this is very harmonious in terms of taste. And once you eat one piece, it’s impossible to stop. The hand involuntarily reaches for the second one.

That's why we have to cook it so big. By the way, its shape may not necessarily be round. They prepare it square, rectangular, or in the shape of a heart, depending on who you like best and what kind of baking dish you have.

In addition to the fact that you can prepare it from regular dough, it can also be prepared with the addition of cocoa. So, if you leave the filling white and add cocoa to the dough, it will turn out not only tasty, but also very beautiful.

The recipe in this case remains unchanged. The additive will be only a few teaspoons of cocoa powder. And in order not to repeat the recipes, I suggest you watch the video.

Royal cheesecake cooked in a slow cooker

This recipe captivated me with the look of the finished product. She turned out to be simply incredibly beautiful and truly “royal”. Another interesting thing is that it is cooked in the microwave.

Nowadays, many people have this miracle of technology and enjoy cooking with it. Therefore, this recipe is just for such lovers.

You can also cook it in the oven using the same recipe. Suddenly someone liked the idea, but he doesn’t have a microwave.

No problem, cook it in the oven. And you will certainly succeed.

I would also like to note that there are other options for preparing this delicious and interesting pastry.

Cheesecake can be prepared with the addition of any fruits and vegetables. Cottage cheese is also present in this case. Everything is prepared exactly the same as in the first recipe, only sliced apples, bananas, or other fruits or berries are laid out on the filling layer. And on top everything is covered with a layer of crumbly dough.

It bakes exactly the same. The base is the same everywhere, but you can endlessly decide and fantasize what to add as a filling.

Instead of cottage cheese, you can also use curd cheese. I've seen recipes like this in magazines. I admit that I have never cooked with them, but I think that there is not much difference in preparation.

All recipes are tested and very tasty! I recommend!!!

If you liked the recipes, rate them. And if you didn’t like it, then I’ll also ask you to give it “Class”. You didn’t like it, maybe your friends will like it!)))

Royal cheesecake - the secrets of delicious baking

The recipe is simple to follow, but there are still some tricks that will make your dish stand out from others. Before you bake a royal cheesecake, you need to choose quality products. It is better to buy cottage cheese that is rustic, not crumbly. If this is not possible, you can add a little sour cream to the store-bought product.
